UMAMI Healthy Cooking Workshop

Iron Man Chef Competition

Ajinomoto Co. (H.K.) Ltd. & Hong Kong Council of Early Childhood Education & Services¡]CECES¡^started a "UMAMI Healthy Cooking Workshop & Iron Man Chef Competition" campaign in 15 secondary schools during April & May. The cooking workshop helps to increase students' understanding on utilizing different seasonings in cooking and designing low sodium (salt) healthy recipe.

Mr. Leslie Chan, the Registered Dietitian of CECES, gave a presentation on the source of UMAMI in food - Glutamate, its nutritional value and its importance in the Chinese dining culture. Chef Mr. Wong O of the Happy Holdings Ltd. demonstrated how to make healthy recipes with appropriate mixture of different seasonings.

A "Iron Man Chef Competition" came as the final session of the workshop. Students in group of 2-3 are given a set of ingredients and seasonings and are requested to cook a dish of healthy fried rice. Judges gave high recommendation and ratings are made in terms of the taste and the sodium level. "The students are very innovative. They demonstrated their understanding of the healthy concept we explained in making their own dish of Fried Rice." said by Mr. Wong. After serious consideration, they selected one group as "The Iron Man Chef" of the day.
