Taste has long since gone beyong the boundaries of human subjectivity and emerged as one of the new frontiers of science. As one of the basic tastes,"Umami" is an abstraction, but we have become familiar with the nuances of its maifestations in a wide range of common dished.
Umami is unlike the other basic tastes (sweet, sour, salt and bitter) and is fundamental to many living things. Many scientists agree that this could be because umami signals the presence of protein in food. Similarly, sweetness indicated energy-giving carbohydrates. Bitterness alerts to toxins. Saltiness is a sign that our borides needs minerals.
